Cooking gluten and dairy free

I am really being challenged in the kitchen lately, as my husband has been diagnosed with IBS, and is on a gluten/dairy-free diet, which, as you can imagine, cuts out an awful lot of food. Add to this the fact that my daughter and I don’t eat meat/meat products, and it becomes almost “tear-your-hair-out” territory! I am trying to approach this as an adventure, rather than a chore ;) There are quite a lot of gluten and dairy free products out there in the right shops, but they are so expensive. Making cakes and puds is the hardest thing, but I hope to be up and baking soon!

One thing we can all eat and enjoy is my fish stew, so here’s the recipe. Absolutely meat/gluten/dairy-free!

It’s just fried onion, frozen peas & sweetcorn, topped with skinless/boneless fish fillets (I used salmon and smoked haddock…strong flavours work best) and covered with some vegetable stock. Oh, and some lemon juice and plenty of fresh parsley and tarragon. Remove some ladles of stock at the end, thicken with cornflour, and stir back into the stew. Serve in a big bowl with potatoes and veg so you can have as much lovely juice as you want!

  5. My roommate, best friend, and I are actually in the same boat. She is on a gluten free diet and I am on a Dairy free diet. Cooking dinner together or even going grocery shopping can be tough.
